That is what happened with this pie. Whatever its original source may have been, it became Mom’s Pineapple Dream Pie and part of my memories of her.

The Most Important Step: Drain the Pineapple Well

Thoroughly draining the pineapple is the most important part of this recipe.

Excess pineapple juice can thin the filling and make it difficult for the pie to set. Pour the pineapple into a colander and let it sit for several minutes rather than draining it quickly and immediately adding it to the filling.
